Shucked oyster meats (Open-Stock) are processed in our state of the art HACCP facility in our opening and packing rooms or using our High Pressure Process. Each year we harvest, process and ship over 80,000 gallons of oyster meats. Oyster meats are graded by size and packed according to volume
