| How
to handle an oyster.. |
Live
oysters are best eaten as soon as possible, preferably within
a week of harvest. But properly stored a live oyster
can have a shelf life of up to two weeks. To keep them
until you are ready to prepare them, place the oysters in
an open container in a refrigerator and keep them covered
in a clean wet towel (this prevents them from drying out).
DO NOT keep them in a bucket of seawater, in plastic bags
or any type of sealed container. Note: if any oysters are
"gaping", they should be tapped lightly. If
they close up, they are still alive, if not they should be
discarded.)
