Goose Point Oysters are a true delicacy noted for their mild flavor and are in high demand in oyster bars and at special occasions everywhere as live In-shell product. Some would say that a freshly shucked, raw, oyster is the only way to eat them!

Fresh Goose Point Oysters on the Half Shell

Goose Point oysters grow to a plump size and produce a beautiful compact shell. According to our taste experts (those of us who taste them every day) Goose Point Oysters can taste like "Ocean air... a light salty clean taste with a smooth follow-through."  Taste one yourself and we think you will agree with our description. 

These oysters are wonderful served fresh "on the half-shell" or can be prepared in a variety of ways, including on the barbecue.

Goose Point oysters are available in  yearling, extra small, small, medium and large sizes.  We deliver our oysters the same or next day after being picked from the beds to ensure the longest shelf life possible

How to handle an oyster..

Live oysters are best eaten as soon as possible, preferably within a week of harvest.  But properly stored a live oyster can have a shelf life of up to two weeks.  To keep them until you are ready to prepare them, place the oysters in an open container in a refrigerator and keep them covered in a clean wet towel (this prevents them from drying out).  DO NOT keep them in a bucket of seawater, in plastic bags or any type of sealed container. Note: if any oysters are "gaping", they should be tapped lightly.  If they close up, they are still alive, if not they should be discarded.)

Always refrigerate your oysters!
